&lt;h2&gt;The North Bridge Brasserie and Bar at The Scotsman hotel
announces the appointment of Paul Hart as Executive Head
Chef.&amp;nbsp;&lt;/h2&gt;

&lt;p&gt;Paul joins the team, having been recognised as one of Scotland's
leading chefs due to gaining an impressive number of accolades.
These include the Scottish Chef Association's Hotel Chef of the
Year, Good Food Guide's Scottish Newcomer of the Year, Chef
Medaille d'Or by HotelReview Scotland and retaining three AA
rosettes for three consecutive years.&lt;/p&gt;

&lt;p&gt;Commenting on his appointment, "I &lt;em&gt;am extremely excited about
my new challenge! Having built up a network of local suppliers, I
have developed a great passion for sourcing fantastic seasonal
Scottish produce. I look forward to embracing the Scotsman's
established ethos of creating quality Scottish cuisine."&lt;/em&gt;&lt;/p&gt;

&lt;p&gt;Originally from North Wales, Paul trained at catering college
before working with some of the world's most highly respected chefs
including Raymond Blanc and Simon Hopkinson.&lt;/p&gt;

&lt;p&gt;Paul launched his career at the St David's Park Hotel, Chester
from where he moved to work at the AA two rosette-awarded Couldson
Manor in Surrey before a year at the Sydney Opera House's
prestigious Harbour Restaurant where he gained valuable knowledge
of fusion cuisine.&lt;/p&gt;

&lt;p&gt;On his return to the UK in 1999, Paul worked at The Sloane Club
in London before joining renowned London restaurant Bibendum as
Senior Chef de Partie, and subsequently Sous Chef. Here he gained
valuable experience in a three AA Rosette restaurant
environment.&lt;/p&gt;

&lt;p&gt;After more than two years at Bibendum, Paul moved to the
Michelin star-awarded Chapter One in Bromley, Kent before taking up
the position of Demi Chef de Partie at the famous Le Manoir Aux
Quat'Saisons in Oxfordshire, under Raymond Blanc's tutelage.&lt;/p&gt;

&lt;p&gt;Two years as Sous Chef at the Michelin starred Moody Goose
Restaurant in Bath followed Le Manoir, before Paul took up his
first Head Chef position at the four AA Red Star Cringletie House
Hotel in Peebles.&amp;nbsp; Here Paul led his team to achieve the award
of two AA rosettes for the hotel's restaurant.&lt;/p&gt;

&lt;p&gt;Joining the Old Course Hotel, St Andrews as Head Chef in 2007,
Paul gained the prestigious accolade of three AA rosettes for the
hotel's à la carte restaurant, The Road Hole Grill and maintained
this impressive standard for the next three years.&lt;/p&gt;

&lt;p&gt;Edinburgh is famous for its landmarks and of course the
Edinburgh festival, but have you considered visiting Edinburgh's
many art galleries? From fine art at the National Gallery of
Scotland and the Gallery of Modern Art to smaller 'boutique'
galleries showcasing Scottish and international artists alike,
Edinburgh is a treasure trove for art lovers.&lt;/p&gt;

&lt;p&gt;With many grand rooms and imposing architectural features, The
Scotsman Hotel has some very grand traditional portraits and
landscapes as well as some modern art pieces scattered throughout
the hotel.&lt;/p&gt;

&lt;p&gt;Being such a fan of modern and fine art alike, the management at
the hotel decided to commission Edinburgh-born artist Carolanne
Jardine&amp;nbsp;to create two collections of work.&lt;/p&gt;

&lt;h3&gt;Edinburgh landmarks&lt;/h3&gt;

&lt;p&gt;The brief for the first collection was&amp;nbsp;to be mindful of the
traditions and historical context of the building whilst offering
it's guests an interpretation of some of Edinburgh's famous
architecture including Holyrood Palace, Scott Monument and of
course, the Scotsman Hotel. This collection is currently on display
in the grand reception and foyer of the hotel.&lt;/p&gt;

&lt;h3&gt;Famous Scottish people&lt;/h3&gt;

&lt;p&gt;The second collection is&amp;nbsp;displayed at the balcony level of
the impressive &lt;a href="http://www.northbridgebrasserie.com"
target="_blank" title="North Bridge Brasserie"&gt;North Bridge
Brasserie&lt;/a&gt; and pays homage to some of Scotland's most famous
faces.&amp;nbsp;Portraits include artist Jack Vettriano, actor Ken
Stott, author Ian Rankin and the late Queen Mother.&lt;/p&gt;

&lt;h3&gt;Private Viewing&lt;/h3&gt;

&lt;p&gt;The hotel hosted "an evening with Carolanne" on Thursday 7th
April 2011.&amp;nbsp; An array of local dignatories attended including
fellow artists, political figures and of course art lovers.&lt;/p&gt;

&lt;h3&gt;New Cocktail on the Menu&lt;/h3&gt;

&lt;p&gt;Our experienced Mixologists in the North Bridge Brasserie put
together a fantastic cocktail named after "Carolanne" and this now
has a permanent place on our extensive cocktail menus.&lt;/p&gt;

&lt;p&gt;The Carolanne has white rum, ginger, lemongrass, ginger beer and
apricot brandy served in a fantastic sugared rimmed glass&lt;/p&gt;

&lt;p&gt;Throughout the month of&amp;nbsp;April, the North Bridge Brasserie

&lt;h2&gt;The Scotsman Hotel, Edinburgh announces the appointment of
Fiona Gray as Director of Sales&lt;/h2&gt;

&lt;p&gt;Fiona Gray joins the team at The Scotsman Hotel as Director of
Sales from her position as Head of Sales at The Old Course Hotel
Golf Resort and Spa, St Andrew's.&lt;/p&gt;

&lt;p&gt;Commenting on her appointment &lt;em&gt;"I am looking forward to my
new challenge at Edinburgh's top hotel. Having worked in the
industry since leaving University I am looking to forward to the
challenge that is to re-establish The Scotsman in relevant National
and International markets. I am aware that the Scotsman has
recently recruited a number of key positions and I look forward to
playing my part within the new team in the re-establishment of the
Scotsman as Edinburgh's top hotel."&lt;/em&gt;&lt;/p&gt;

&lt;p&gt;Born in Glasgow, brought up in Canada and graduating from
Glasgow Caledonian University, Fiona joined the Trainee Management
scheme with Thistle Hotels working in a number of venues before
being eventually promoted to Conference and Events Sales Manager at
The Thistle in Glasgow where she gained valuable experience in the
Conference, Banqueting and Event management elements of the
trade.&lt;/p&gt;

&lt;p&gt;Such was Fiona's success, she was soon elevated to Unit Sales
and then to Area Sales Management covering Ayrshire,
Inverness-shire, Aberdeenshire and Ireland where she gained
experience of multi-site sales management within a large corporate
environment.&lt;/p&gt;

&lt;p&gt;Fiona then enjoyed the experience of managing the sales and
marketing teams at Chardon Management, 11 properties and in the
position of Head of National Accounts Manager at both Best Western
Hotels UK and Ireland and The DeVere Collection.&lt;/p&gt;

&lt;p&gt;With her sights truly focussed on eventually taking a position
of Director of Sales, Fiona then joined the 5 star Old Course Hotel
Golf Resort and Spa as Senior Sales Manager. She was very quickly
promoted to the Head of Sales where she worked with a fantastic
team of 5 remote based Senior Sales Managers. Having enjoyed this
challenging role in the 5 star market for the past few years Fiona
has finally achieved her professional ambition and secured the role
of Director of Sales at the Scotsman Hotel.&lt;/p&gt;

&lt;p&gt;&lt;em&gt;"I am joining a relatively new team at The Scotsman Hotel at
a very exciting time , it is a huge honour and a challenge I am
very much looking forward to."&lt;/em&gt;&lt;/p&gt;
